Plant based products may have a unique set of ingredient and processing characteristics that need to be taken into consideration when they are being developed. Later, once successful, issues of scale may then present their own challenges which need reviewing, before scale up is signed off.

The session starts with basic food safety considerations, before examining some of the important factors that relate to plant based food products.

About the Speaker:

Peter Wareing has over 30 years’ experience in food safety. He has served as expert witness in civil and criminal trials. Peter’s specialist areas are food safety systems, including HACCP, microbiology and mycology. Peter undertakes troubleshooting audits, risk assessments and investigations for clients, provides guidance on traceability systems and delivers food safety related training. He has worked with a range of clients in the food and drinks industry, ranging from startups, SME’s, through to retailers, larger food manufacturers and local government, both in the UK, Europe and internationally. Peter is a Fellow of the Institute of Food Science and Technology, a Registered Food Safety Manager and a Professional Food Mentor.
