Peter will explain the things you need to be aware of in terms of your ingredients and food safety control processes to ensure you manufacture a safe, stable product (as well as one that tastes great!).
Plant-based products may have a unique set of ingredient and processing characteristics that need to be taken into consideration when they are being developed.
Later, once successful, issues of scale may then present their own challenges which need reviewing, before scale-up is signed off.
The session starts with basic food safety considerations, before examining some of the important factors that relate to plant based food products.
